Professor Tim Spector, a leading nutritional scientist, has shared crucial advice on safely handling and cooking eggs amid the UK’s bird flu outbreak. The expert stressed that eggs are safe to eat if proper precautions are taken.
According to Professor Spector, there are two key steps to take when preparing eggs: ensuring the water reaches 165°F (73°C) to completely eliminate any potential virus, and cleaning the eggs first using a cloth before cooking them. Washing eggs with water can damage their protective layer and increase the risk of bacteria or viruses entering the egg.
The professor also highlighted the significant health benefits of eggs, which are rich in vitamins and minerals such as vitamin A, B12, and selenium, as well as premium protein. However, he noted that eggs lack fibre, making it essential to pair them with fibre-rich foods like pea pancakes.
Professor Spector reassured that if good food handling practices are followed, the risk of eating contaminated eggs is extremely low. He emphasized that the science is clear: eggs remain a safe and nutritious choice when prepared properly.
Meanwhile, the UK Health Security Agency (UKHSA) confirmed a case of bird flu in the West Midlands after a person had close contact with infected birds. However, the agency stressed that the risk of avian flu to the general public remains low, and robust systems are in place to detect cases early.
