Buffalo Wild Wings is bucking the trend by cooking its fries in traditional beef tallow. The fast food chain’s fries are made with a rich, savory taste that sets them apart from other chains. Unlike some competitors, B-Dubs doesn’t use cheaper alternatives, instead opting for high-quality beef fat.
The company’s official allergen and preparation guide states that its fries are “fried in beef shortening.” While the terms “tallow” and “shortening” are often used interchangeably, tallow is typically rendered from animal sources and has a softer texture at room temperature. In this case, Buffalo Wild Wings uses “beef shortening,” which is not plant-based.
Tellingly, the brand specifies that it does not use alternative fats in its cooking process. This commitment to quality is evident in the chain’s iconic fries, which have earned a loyal following. Meanwhile, other fast food restaurants opt for less appealing alternatives, such as hydrogenated soybean oil and corn oil.
