A new study found that consuming just three servings of french fries per week can increase the risk of developing type 2 diabetes by 20%. However, eating baked, boiled or mashed potatoes was not linked to an increased risk. Researchers at Harvard T.H. Chan School of Public Health tracked over 200,000 Americans for 30 years and found that replacing fries with whole grains lowered the risk by 19%, while choosing healthier potato options reduced it by 8%. The study’s authors suggest that simple swaps can significantly decrease the risk of diabetes, particularly when enjoying potatoes in moderation.
